Ingredients

  • Blended Irish Whiskey - 1 1/2 oz
  • Fresh lime juice - 1/4 oz
  • Honey-ginger syrup - 3/4 oz
  • Single Malt Whiskey (Peated) - 1/4 oz
  • Fresh Mint Leaves - 5-6 leaves
  • Club Soda - Top up
  • Ice - Cubes

Steps

  • 1. Add blended Irish whiskey, lime juice, honey-ginger syrup, and fresh mint leaves to a shaker and fill with ice.
  • 2. Shake well and strain into a highball glass filled with ice.
  • 3. Float the single malt whiskey on top by pouring it over the back of a spoon.
  • 4. Top with club soda and gently stir once to mix in the mint.
  • 5. Garnish with a mint sprig.
