Rye whiskey - 2 oz
Absinthe - 1 teaspoon
Simple syrup - 1 sugar cube or 1 teaspoon
Peychaud's Bitters - 4 dashes
Lemon peel - 1

Steps
1. Chill an old-fashioned glass by filling it with ice. Let it sit while preparing the rest of the drink.
2. In a mixing glass, muddle the sugar cube and bitters with one teaspoon of water, or use simple syrup instead.
3. Add the rye whiskey to the mixing glass with ice and stir.
4. Discard the ice from the chilled glass and pour in the absinthe, swirling it around to coat the entire inside of the glass. Discard the excess absinthe.
5. Strain the contents of the mixing glass into the prepared old-fashioned glass.
6. Garnish with a lemon peel, making sure to twist it over the drink to release its essential oils, then rub the peel around the rim of the glass and drop it in.
